I Should Stop And Smell The Roses - First Rose Of The Season


Here is the first rose of the season at my house.  I have four rose bushes and they are so beautiful and not hard to grow or take care of.  The only thing I do is watch them grow!  My husband trims them in the spring and puts fertilizer on them.  I don't have to water them unless it gets pretty dry.  They are a lot cheaper than buying them in a flower shop too.  So I should really stop and smell the roses!

I heard someone say this quote once and it has a lot of meaning.  I think every one should try to make each day the best that they can because you never know what lies ahead in the future.  Enjoy your life to the fullest each day, no matter what you are doing.  Don't have hatred in your heart or hold a grudge because you are only hurting yourself.  Enjoy the little things in life, like a child's smile, a beautiful flower, the birds chirping and such.  Be thankful for everything you have.  There are a lot of people who have far less.

Wedding Anniversay Memories - The Church My Husband And I Got Married In

I can't believe it but tomorrow is our 28th wedding anniversary!  The church we got married in is the one that we still belong to and this is the actual picture of it.  All of our children were baptized and confirmed in the same church.  It just happens that our daughter is going to be in her friend's wedding tomorrow in the same church.     I'm sure it will bring back memories of our wedding day.  It was a beautiful sunny day and my husband was nervous to walk down the aisle in front of everybody.  Many years have gone by and lots of things have changed.  I'm very blessed to have a good husband!  Those years sure do fly by fast!

A Bible Verse To Fit Me

I read my daily Portals of Prayer which I get from my church.  It's a little booklet which has a daily short story and bible verse with it.   I have been suffering with a sinus infection for about a month now and today's bible verse was "The sufferings of this present time are not worth comparing with the glory that is to be revealed to us." (Romans 8:18).  I read this verse and it uplifted me!  I can't humanly imagine how great it will be in heaven with no pain or suffering.  How wonderful it will be!  We all have a cross to bear in this life.  Some people have more problems or illnesses than others.  You might think some people have such a wonderful life with no problems the way they look on the outside.  But you can't see what they might be going through in their life.  God bless you all this holiday weekend!

Have You Heard About Hair Chalking -The Latest Trend

Have you heard about hair chalking?  I never heard of this till I read about it yesterday. It sounds like the latest trend for hair!  It doesn't sound complicated and is low cost.   The article said to take a piece of chalk and run it along the strand of hair until it's colored.  If necessary you can pull the hair through a curling iron to set it.   Also it's important to use soft pastel chalks which only cost around $6 to $8 for a set.  It's the kind of chalks artists use, not oil-based chalks or sidewalk chalk.

To remove the color it said to shake or brush your hair to dust out the chalk before washing your hair.  The chalk can get messy, so wear plastic gloves.  This sounds like fun for a lot of girls out there!

This Allergy Season Is The Worst Ever

I have allergies and I get a sinus infection usually in the Spring and Fall.   My allergist said the allergy season is lasting twice as long this year because of the warm March we had.  This Spring has been the worst sinus infection I have ever had in my life.  I have been to the doctor four times (including an ear, nose and throat doctor) and am on my third antibiotic.  On top of that I have had three cortisone shots, a shot in each of my sinuses, and prednisone pills.  The allergist said I have to get a shot every week till July.  I was getting them every other week all the time.  A couple of days ago I had the worst sinus headache ever.  It was so bad I was throwing up.  I have never been that bad before.  So I believe it when they say this is the worst allergy season ever!

My Husband Found Out Butter Is Better

My husband recently found out he likes real butter better than margarine.  I usually always purchased margarine for every day use.  At home my mom and dad always bought real butter since my dad grew up on a farm and knew the difference.  I guess my husband didn't know butter tastes better till recently.  I had purchased butter and put the stick on the butter dish.  My husband makes English muffins every day and had been using it quite regularly.  Well, I ran out of butter and put a stick of margarine on the dish.  He told me now that he doesn't want margarine any more and it doesn't taste as good as butter.  His mom never bought butter so I guess he didn't know the difference all those years.  Butter is better but it is more expensive.  I guess now I'll be buying butter.  What do you use?

I've Got A Habit Of Eating In Bed At Night

I have a bad habit of eating after I go to bed!  I've been doing it for years and can't seem to stop it.  I go to bed and lay there for a while and don't get to sleep.  Then I get up and go find something to eat and bring it back to bed.  Last night I got a piece of cake and then some Doritos.  If I didn't do this all the time I'd probably be ten pounds lighter.  I know it's not good for me but it's hard to break this habit.  Then there are the leftover crumbs in bed you see the next day.   Does any one else do this or have any advice how to quit?  I don't think I'm the only one who does this :)

Who Do You Think Will Win On American Idol?

I was surprised last night when Joshua was eliminated from the show.  They are all good but I always thought he would be the winner or one of the last two.  He always has been a standout and every performance was great.  The judges never had anything bad to say about him.  I like Jessica and Phillip also.  Phillip is one of a kind unique and Jessica has such a pure voice.  I'm sure they will all get record deals and have a career in singing.   I don't know what I'm going to watch when this show is done for this season.  Oh yes, America's Got Talent will be starting sometime in the near future and this is always a good show.  It's such a variety of different acts and is always entertaining.

The picture above are some rose bushes that have buds on them and the bottom are irises that are budded.  Pretty soon I'll have some roses and irises.  Yeah!

Get Instant Color With A Beautiful Hanging Basket

A hanging basket I have hanging on my front porch.  There was a bumblebee buzzing on it when I took the picture.  I like the combination of purple with the yellow flowers.  Flowers are so beautiful to look at!

Steak Fajitas

2 lbs. flank steak (I used a regular steak)
1/4 cup lime juice
2 tbsp. canola oil
2 large garlic cloves, minced
2 tbsp. soy sauce
1 tbsp. ground cumin
2 tsp. light brown sugar
2 large jalapenos, finely diced
2 medium onions, sliced
2 large green peppers, sliced
2 tbsp. vegetable oil
1/2 tsp. salt
1/2 tsp. pepper
10 (6-inch) flour tortillas
8 oz. 4-cheese Mexican shredded cheese
8 oz. sour cream

In the morning-
Rinse the steak under cold water and pat it dry with paper towels.  Place the steak on a cutting board.  Cut the steak in half lengthwise.  Now cut 1/4-inch strips (cutting against the grain).  Place the steak in a large bowl.  In a small bowl, combine the lime juice, oil, garlic, soy sauce, cumin, brown sugar, and jalapenos.  Pour the lime juice mixture over the steak and toss well.  Cover and refrigerate until dinnertime.  Place the sliced onions and peppers in a separate container and refrigerate.

At Dinnertime-
Heat the vegetable oil in a large nonstick skillet over medium heat.  Add the onions, peppers, salt, and black pepper.  Stir occasionally and cook until tender.  Remove the onions and peppers and place in a bowl.  Brown the steak on both sides in the hot skillet in 3 or 4 batches on medium-high heat.  Add additional oil to the pan if necessary.  When all of the steak is cooked, return all of the steak and vegetables to the pan and mix together.  Turn the heat down to low and keep warm.

Assembling the Fajitas-
Place a damp paper towel on a dinner plate.  Put the stack of tortillas on top.  Place another damp paper towel over it.  Microwave the tortillas for 20 seconds on high power.  Take one tortilla at a time and add 1/2 cup of the steak and vegetables on the tortilla.  Add some shredded cheese and sour cream.  Roll up the fajitas and serve immediately.  Makes 10 fajitas.

Pesky Deer Or Rabbits Ate Our Tomato and Pepper Plants

My husband planted about a dozen tomato plants and eight pepper plants yesterday.  Today he said there were deer tracks around them and the plants have all been eaten.  You can see some of the stems in the picture.  We've never had this happen in our 17 years of living here.  So now he went to the store to see what we can do to deter the deer or rabbits from eating them if we plant some more.  Does anyone have any ideas for this problem?

The Doctor's Appointment That Wasn't

Today I went with my mom who is 83 years old to a doctor appointment she had.  We got there early and sat down in the waiting room.  There was no one else in sitting in the room so we thought we would not have to wait long to see the doctor.  We had just sat down when a girl in the office came out and said "hello girls".  Then she explained that there wasn't any appointments today, just office workers there.  My mom said that she had called last week and make the appointment.  The girl looked up her name and didn't see any appointment for her any day.  My mom has a good mind (better than mine sometimes).  I don't know what happened and who she talked to when she made the appointment.  So anyways, now my mom made an appointment for next week.  It wasn't a wasted trip to the city though.   We went to eat and went shopping:)

Magic Cookie Bars


1-1/2 cups graham cracker crumbs
1/2 cup (1 stick) butter or margarine melted
1 (14 ounce) can sweetened condensed milk
2 cups (12 ounces) semi sweet chocolate chips
1-1/3 cup flaked coconut
1 cup chopped walnuts

1.  Preheat oven to 350 degrees (325 degrees for glass dish).  In small bowl, combine graham cracker crumbs and butter; mix well.  Press crumb mixture firmly on bottom of 13x9-inch baking pan.
2.  Layer evenly with remaining ingredients and press down firmly with fork.  Pour sweetened condensed milk evenly over everything.
3.  Bake 25 minutes or until lightly browned.  Cool.  Chill if desired.  Cut into bars.  Store covered at room temperature.

A Beautiful Bouquet From My Husband

Yesterday I went away for a little while to go to an estate sale with my mom.  I got home and there was a bouquet of flowers sitting on the kitchen counter.  I thought it was from someone who I had subbed for at work.  She had gotten me an arrangement before and so I thought maybe she had gotten me something again.  I asked my husband if someone delivered the arrangement and he said yes.  I unwrapped the tissue paper over the flowers and was happily surprised that it was from my husband!  He had gone to the flower shop while I was gone and put them on the counter.  Little things like this really makes a person feel good!  He wrote a nice little note on the card too for Mother's Day

Happy Mother's Day Mom!

Today we celebrate a day in honor of our mother.  I am fortunate to have my mother who is 83 years old.  My mom lives two houses from me and still lives alone.  My dad passed away 12 years ago.  Mom is an easy going person and likes to laugh and joke around.  She's had hip replacement, knee replacement and a couple of back surgeries and she can't walk very good.  She also has osteoarthritis.  Mom is always in a positive mood though.

Mom  had a rough childhood.  My mom's dad passed away from a fire when she was a little girl.  Her mother died from breast cancer when she was pregnant with me.  So I never knew my grandma.  She also had a little brother that died when she was growing up.  

My mom got married when she was 16 years old!  She and my dad had my older sister who is ten years older than me.  Then she had a premature baby boy that died.  She couldn't get pregnant for a long time.  Then when my sister was ten years old my mom and dad had me!  Mom was married to my dad for over 50 years till he passed away.  I'm thankful for my mom and very blessed!

Pulled Pork Sandwiches In A Crock Pot

3 - 4 lb. pork loin cut in chunks
1 large onion diced
1/4 cup ketchup
bottle of your favorite barbecue sauce
3 tbsp.worcestershire sauce
1/8 tsp. pepper
1/4 tsp. salt
1/8 tsp. garlic powder

Place pork loin in crock pot and add the rest of the ingredients.  I added a little water at the beginning.  Cook on high for about 6 hours.  As it's cooking you can mix the ingredients in the crock pot.  The pork was so tender I used two forks and shredded it right in the crock pot.  You could remove it and shred it and place it back in the crock pot also.

Chocolate Addiction

After Easter I decided to quit eating chocolate.  I was getting used to eating a few pieces (or more) every day and I felt like I was addicted to chocolate.  I could tell my pants were getting tighter and I didn't feel right.  I'm the type who can't just have one little miniature candy bar I guess.  I think my mom is addicted to chocolate too.  Every time we go shopping together she has to buy chocolate.  Oh well, she's 83 so I guess she can do what she wants.  It sure takes a long time to lose a couple of pounds after you get to be middle age though.  I remember when I could eat anything I wanted to and was always the same weight.  Those days are gone.  Hmm, I just got hungry for a cookie.  Well, it's better than chocolate, isn't it?

Keeping Up With The Joneses

I wonder how many people like to keep up with the Joneses (their neighbors).  People tend to want to have things just as good as their neighbors, even if they can't afford it.  So many people live beyond their means.  No wonder they have such high credit card debt.  I'd love to have things that I can't afford, but I go without a lot of luxuries.  That's the way I was brought up.  My parents didn't ever have a credit card.  I guess it's just human nature to want what someone else has but does it really make you happier?  I think that there are a lot of people who have everything imaginable but aren't truly satisfied.  What do you think?

Make Some Extra Money With A Garage Sale

I am starting to get ready for our annual garage sale.  It seems like every year I have enough stuff to have another one.  Where does the stuff accumulate?  After my sale last year (I had it a few weekends) I gave the rest to the Salvation Army.  This year I am having it at my mom's house because she has stuff to sell also and has a nice large garage also.  It is a little work (well, some people say it's a lot of work) but we have fun doing it.  We've had sales for many years and you meet some nice people.  Some are looking for antiques, some look for things they can use or that they collect.  Many people just like to look for something that catches their eye.  The way you display your items for sale makes it look appealing.  I always put tablecloths on the tables or white sheets.  If you have a few small things put them in a ziploc baggie and price the bag.   Also make sure everything is clean.   If you're thinking about having a garage sale make sure you have enough change, have everything priced, have lots of newspaper and bags.  Also make sure you have good signs (I use bright pink poster board to make mine).  I put the address in black marker and black arrows to which direction to go on the signs.  You'll be surprised at how much money you can make for things you don't want!

My Strawberry Plants Have Spread

 Two years ago my niece gave me a couple of strawberry plants from her garden to grow in mine.  It was in September, which I read is a good month to plant them.  Last year I had a about a bowl of strawberries.  This year they have really spread all over our garden spot.  There are lots of white blossoms and we should have lots of strawberries.  They are so easy to grow for an amateur like me.  I have them planted in the full sun which they love to thrive in.  If you have lots of garden space and like strawberries, this might be just for you.

Strawberry Spinach Salad

1 lb. spinach, washed with stems removed
2 tbsp. butter
3/4 cup sliced almonds
1 pint strawberries, sliced


Dressing:
1/2 cup sugar
1 tbsp. poppy seeds
2 tbsp. sesame seeds
1/4 cup cider vinegar
1/4 cup red wine vinegar
1/2 cup olive oil


Mix all of the dressing ingredients together in a small bowl.  Cover and refrigerate.  Rinse the spinach, remove the stems, and spread out on paper towels to dry.  Place the spinach in a large serving bowl and refrigerate.


Just Before Serving: 
Melt the butter in a small skillet over medium heat and toast the almonds until light brown.  Spread them out on paper towels to cool.  Clean and slice the strawberries.  Add the strawberries and almonds to the spinach.  Pour the dressing over the spinach and mix gently.  Serves 5.

Tri-Colored Rotini Pasta Salad

1 -16 oz. box of tri-colored rotini
1 can black olives (sliced)
4 -5 cherry tomatoes or 1 large tomato (cut up in small pieces)
1 small onion (diced)
1 pepper (red or green) diced
1 regular bottle of Italian dressing
McCormick Salad Supreme Seasoning (about 3 tbsps.or more to taste)

Cook rotini according to instructions on box.  Drain and rinse well with cold water.  Put in a medium bowl.  Add the rest of the ingredients and mix well.   Cool in refrigerator.  This is good for summertime or for a potluck also!

Creamy Chicken and Pasta

2 cups uncooked penne pasta
2 cups sliced fresh mushrooms
1 cup sliced green onions (or regular onion)
2 tbsp. butter
1/2 cup white wine 
1 tsp. minced garlic
1 tbsp. all purpose flour
1/3 cup water
1 cup heavy whipping cream
2 cups cubed cooked chicken
2 tbsp. capers, drained
1/4 tsp. salt
1/8 tsp. pepper
Shredded Parmesan cheese

Cook pasta according to package directions.  Meanwhile, in a large skillet, saute mushrooms and onions in butter for 4-5 minutes or until tender.  Add wine or broth and garlic.  Bring to a boil; cook until liquid is reduced by half, about 5 minutes.

Combine flour and water until smooth; gradually add to mushroom mixture.  Bring to a boil.  Reduce heat; cook and stir for 2 minutes or until thickened.  Stir in cream.  Bring to a boil.  Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through.

Drain pasta.  Add the pasta, chicken, capers, salt and pepper to cream sauce.  Cook for 3-4 minutes or until heated through.  Sprinkle with Parmesan cheese.

I got this recipe from Taste of Home magazine some years ago.  I omit the chicken sometimes and it's very good either way!

Oatmeal Chocolate Chip Cookies

1 cup (2 sticks) margarine or butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1-1/2 cups all purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 cups oatmeal
1 cup chocolate chips


1.  Heat oven to 350 degrees.
2.  Beat together margarine or butter and sugars until creamy.
3.  Add eggs and vanilla; beat well.
4.  Add combined flour, baking soda, cinnamon and salt; mix well.
5.  Stir in oatmeal and chocolate chips.  Mix well.
6.  Drop by rounded tablespoonfuls onto ungreased cookie sheet.
7.  Bake 10 to 12 minutes or until golden brown.
8.  Cool 1 minute on cookie sheet; remove to wire rack.

Makes about 4 dozen cookies.  I got this recipe from a box of Quaker Oatmeal and changed it from 1 cup of raisins to 1 cup chocolate chips because we don't like raisins very much.

I get a haircut about every three to four weeks.  My hair just grows so fast and I like it at a certain length to keep my style I like.  It does get costly but it's something I do because I like to try to look my best.  I think it makes you feel better about yourself when your hair looks good.  I have short hair and get it high lighted about every two or three months.  It gives my hair more body and is easier to style also.  All I do is wash my hair and blow dry it.  Then I use some hair wax  and run it through my hair with my fingers and style it with my hands.  I really like that stuff.  It works good on my hair and gives it a nice look.  Then I just use a little hair spray to make it hold.  Years ago I used to get perms all the time.  I guess a lot of people did then.  My mom still gets perms though.  I notice when I take her to the salon that a lot are senior citizens.  Remember sitting under the dryers like these old fashioned pictures?  They look like they're from out space.  Isn't it funny how fads and styles change.

Small Town Living Versus City Living

I have lived in a small town since I was born except a year when I moved to North Carolina with my sister before I was married.  Living in a small town has some advantages and many disadvantages.  We have to drive at least 30 to 45 miles to the city for any big stores, good doctors, and hospitals.  The only grocery store we have in our town isn't the greatest and has high prices.  At least we have one so I shouldn't complain.  We have a population of approximately 2,000 and every one is related in some way.  Every one knows the latest gossip and there are cliques, which I don't like.  

There are some good things about small towns like we live in a safe town with not much crime that I know of.  It's a nice place to raise a family when the kids are small and for retirees.   Nobody has burglar alarms or the such.  You can go for a walk and not be afraid of being mugged.  Kids usually move away after they graduate from high school and never come back.  My kids will probably move to some city when they (hopefully) get a job after college.  There isn't anything for them in a small town, especially for what they are going for in college.  My daughter is going for Graphic Art Design and my twin sons are going for Digital Video Production.  So there you have it.  Do you like where you live?
